Ingredients

The ingredients are:
  • 2 tablespoons unsalted butter
  • 1 shallot, minced
  • Salt and pepper
  • 1 cup dry quinoa (rinsed well until the water runs clear)
  • 1 1/3 cups water ( or chicken stock)
  • 1/2 cup almonds (unsalted, toasted)
  • 1/2 cup fresh parsley, chopped

How to Make

  • Step 1: In a medium saucepan or pot, melt the butter over medium-high heat.

  • Step 2: Add the shallot and cook until softened, about 4 minutes.

  • Step 3: Sprinkle with Salt and Pepper.

  • Step 4: Add the Quinoa and cook 1 minute.

  • Step 5: Add 1 1/3 cup water-bring to a simmer-cover- turn the heat down to low/simmer and let cook, covered, until the water is absorbed, about 17 minutes.

  • Step 6: Take off the burner and let stand for 10 minutes - gently stir in almonds and chopped parsley - serve.
