Step 1: In a medium saucepan or pot, melt the butter over medium-high heat.
Step 2: Add the shallot and cook until softened, about 4 minutes.
Step 3: Sprinkle with Salt and Pepper.
Step 4: Add the Quinoa and cook 1 minute.
Step 5: Add 1 1/3 cup water-bring to a simmer-cover- turn the heat down to low/simmer and let cook, covered, until the water is absorbed, about 17 minutes.
Step 6: Take off the burner and let stand for 10 minutes - gently stir in almonds and chopped parsley - serve.
