Ingredients

The ingredients are:
  • 1 package (10 ounce) package frozen chopped spinach
  • 4 large eggs, light beaten
  • 1 cup sour cream
  • 1 cup cottage cheese (creamed, small curd)
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons all-purpose flour
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup yellow onion, minced
  • 2 garlic cloves, fine minced
  • 3 cups Swiss cheese, grated (divided)

How to Make

  • Step 1: Preheat the oven to 325 degrees F. Spray an 8 by 8-inch baking dish with cooking spray.

  • Step 2: Unwrap the spinach and put it, box and all, on a plate. Microwave and cook on high power for 4 minutes. Allow it to cool and remove it from the box. Squeeze out all the liquid with your hands, put it into a medium bowl.

  • Step 3: In a medium bowl, combine the eggs, sour cream, cottage cheese, Parmesan, flour, seasoned salt, and pepper. Blend in food processor until the mixture is smooth, about 1 minute. Pour the mixture into the bowl with the spinach. Mix in onion, garlic and 2 cups Swiss cheese. Pour the spinach mixture into the baking dish and smooth out the top.

  • Step 4: Sprinkle top with remaining 1 cup Swiss cheese.

  • Step 5: Bake until set, about 35-40 minutes. Remove the baking dish from the oven (it will be puffed up, but will fall slightly as it cools). Allow it to cool slightly, then slice into squares and serve.
