Ingredients

The ingredients are:
  • NOODLES
  • 3/4 to 1 pound rice noodles (Asian noodles, you can also use thin spaghetti, but I prefer the rice noodles)
  • 2 to 3 tablespoons sesame seeds (toasted or not)
  • 4 scallions, diced (white and green parts)
  • 1/4 cup peanuts (unsalted, chopped)
  • SAUCE
  • 1/3 cup creamy peanut butter
  • 1 piece (1-inch) gingerroot (peeled and rough chopped)
  • 1 garlic clove
  • 3 tablespoons dark brown sugar
  • 1/4 cup soy sauce
  • 3 teaspoons chili garlic sauce
  • 1/4 cup seasoned rice vinegar
  • 1/4 cup oil (peanut oil)
  • 1 teaspoon sesame oil (toasted, regular sesame oil can be substituted)
  • 2/3 cup warm water
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Sauce ... You can't get much easier. Add everything to a food processor or blender; and blend or puree until smooth, and well combined. Simply set to the side.

  • Step 2: Noodles ... I really prefer the rice noodles. They don't take long; so, make sure everything else is ready. I do like to chill the whole dish at least 1 hour or more before serving if possible, so plan ahead. Vermicelli can also be substituted.

  • Step 3: Once the noodles are done; drain and rinse to cool - then, toss with the sauce. It will be thin ... don't worry. Cover and refrigerate 1 hour before serving. The sauce will be absorbed, and thicken as it cools.

  • Step 4: Serve ... Garnish with peanuts, sesame seeds; and plenty of scallions. ENJOY! I often serve a green salad on the side.

  • Step 5: And, make it a complete dinner by adding grilled chicken, or your favorite protein.
