Step 1: Sauce ... You can't get much easier. Add everything to a food processor or blender; and blend or puree until smooth, and well combined. Simply set to the side.
Step 2: Noodles ... I really prefer the rice noodles. They don't take long; so, make sure everything else is ready. I do like to chill the whole dish at least 1 hour or more before serving if possible, so plan ahead. Vermicelli can also be substituted.
Step 3: Once the noodles are done; drain and rinse to cool - then, toss with the sauce. It will be thin ... don't worry. Cover and refrigerate 1 hour before serving. The sauce will be absorbed, and thicken as it cools.
Step 4: Serve ... Garnish with peanuts, sesame seeds; and plenty of scallions. ENJOY! I often serve a green salad on the side.
Step 5: And, make it a complete dinner by adding grilled chicken, or your favorite protein.
