Ingredients

The ingredients are:
  • 1 can (14 ounce) tomato sauce
  • 2 teaspoon lime juice
  • 1 1/2 teaspoon chilli powder
  • 1 1/2 teaspoon oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 pound boneless skinless chicken breasts, cut into strips (I used thighs)
  • 2 cups diced zucchini
  • 2 cups corn kernels
  • 1 1/2 cups Tex Mex shredded cheese, divided (Kraft)
  • 1 to 2 cups lettuce, shredded
  • 2 plum tomatoes, diced
  • 1 bag (230 gram) nacho chips

How to Make

  • Step 1: Heat the tomato sauce, lime juice and seasonings in a large frying pan over medium heat.

  • Step 2: Add the chicken and cook for 5 minutes.

  • Step 3: Stir in zucchini and corn; cook 3 to 4 mins or until chicken is no longer pink. (This will depend on thickness of chicken pieces)

  • Step 4: Reduce heat and stir in 1 cup cheese until melted.

  • Step 5: Pour into a serving vessel, sprinkle with remaining cheese, lettuce, tomatoes and serve with nacho chips.
