Ingredients

The ingredients are:
  • 1 pound spaghetti or thin spaghetti (my favorite)
  • 8 slices bacon, chopped (you can use thick sliced, but you'll feel guiltier)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 hearty dash of red pepper flakes (you pick...you know how much red pepper flakes you like)
  • 5 large eggs
  • 1/2 cup grated parmigiano-reggiano cheese, plus more for serving
  • Fresh ground black pepper (generous amount)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Cook the bacon pieces over medium-low heat until most of the fat is rendered, but it's only a little crispy. Do NOT drain that delicious bacon grease!

  • Step 2: Boil the pasta according to directions in plenty of salted water. Or not. If you read Axe's review, you'll see that his family found this too salty what with bacon included, so leave the salt out, if you like.

  • Step 3: To the bacon pan, add the oil, garlic, and red pepper flakes until the garlic is slightly browned.

  • Step 4: Beat the eggs, black pepper, and cheese together in a bowl.

  • Step 5: Toss the cooked and drained spaghetti in the pan with the bacon. REMOVE the pan from the heat, and add the egg mixture. Stir CONSTANTLY! This will ensure a creamy egg sauce, not scrambled eggs with spaghetti.

  • Step 6: Plate, and serve with more cheese, if you like.
