Ingredients

The ingredients are:
  • 1 head romaine lettuce
  • 1 cup red onions, thinly sliced and halved
  • 1 cup sliced black olives
  • 2 oranges
  • DRESSING
  • 1/4 cup fresh lemon juice
  • 1 teaspoon. sugar
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 cup olive oil
  • 1/2 cup flat leaf parsley, chopped (I recommend not subbing dried)

How to Make

  • Step 1: Tear the romaine into bite-sized pieces, or spread the leaves on a platter if you prefer that presentation. Scatter onions and olives over the top.

  • Step 2: Remove the skin and white pith from the oranges, and separate into sections. Scatter over the salad.

  • Step 3: Whisk together the first five dressing ingredients. Drizzle over the salad and garnish with parsley.
