Ingredients

The ingredients are:
  • 1/2 head iceberg lettuce, chopped
  • 1 head romaine lettuce, chopped
  • 1/2 small red cabbage head, chopped
  • 1 cup cooked chicken, diced
  • 1/2 pound bacon, cooked and diced (I used turkey bacon)
  • 1 cup cooked ditalini pasta
  • 1/2 cup gorgonzola cheese, crumbled
  • 2 extra large eggs (hard boiled, diced, optional)
  • 1 red onion, chopped
  • 3 to 4 scallions, diced
  • 1 celery rib, diced (not traditional, but I like it)
  • 15 cherry tomatoes, cut in quarters
  • 1/4 cup pimento-stuffed green olives (cut in half)
  • DRESSING
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground pepper
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Pasta ... Cook according to package directions. Make sure to use plenty of salted water. Rinse with cold water; and cool completely.

  • Step 2: Bacon ... I actually like to buy a couple of packages, when they go on sale; bake and freeze. This is perfect for this. I also used turkey bacon for this; but, use your favorite. And, cook your bacon however you like. Once it is done, chop it up - not too fine.

  • Step 3: Chicken ... You can roast your own bone in skin on breasts; or poach chicken breasts. You could also use a store bought rotisserie chicken; use what is easiest.

  • Step 4: Dressing ... You can use a bowl; or a tupperware 'like' container, which I do. Just add everything and shake; if using a bowl, mix to combine, using a fork or whisk. Set to the side, or refrigerate until ready to use.

  • Step 5: Salad ... Add all the ingredients (except the cheese) to a large bowl and mix to combine. Add 1/2 of the dressing and toss. I prefer to dress my salad 'lightly;' but, add more dressing if you like. Then, add the cheese, and lightly toss. I hope you decide to add the optional celery and eggs; I think you will like it. The celery I add to the salad; the egg, I usually use as a garnish.

  • Step 6: Serve and ENJOY! ... I always serve extra dressing on the side; and, plenty of crusty bread!
