Step 1: In a large bowl, mash the bananas and mix with the eggs, applesauce, maple syrup, coconut milk and the oil; set aside.
Step 2: Process the sliced almonds in a spice/nut grinder until finely ground; set aside.
Step 3: In another large bowl, sift together the remaining ingredients.
Step 4: Mix all the ingredients together and spoon into 12 silicone muffin cups that have been coated with non-stick spray.
Step 5: Place on a baking sheet and bake in a pre-heated 350 degree Fahrenheit oven for about 30 minutes, until golden brown and cooked through.
