  • 1 can (15.5 ounce) black beans (rinsed and drained)
  • 1 cup frozen corn (thawed)
  • 1/2 cup green bell pepper, diced
  • 1/4 cup onion, diced
  • 2 tablespoons pimiento
  • 2 tablespoons lime juice
  • 2 tablespoons sugar substitute
  • 2 tablespoons oil (olive oil)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried spearmint (or peppermint)

How to Make

  • Step 1: In a medium bowl, combine black beans, corn, bell pepper, onion and pimiento.

  • Step 4: Cover and refrigerate a couple of hours to allow flavours to meld.
