Ingredients

The ingredients are:
  • 1/2 cup butter, softened
  • 3/4 cup brown sugar (preferably a mixture of dark and light brown sugar)
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract (OR 2 teaspoons maple extract OR 3-4 teaspoons white rum, which is what I use)
  • 1 large egg
  • 1/2 cup peanut butter (use commercial peanut butter, you can use a little more if you like)
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups quick-cooking oats
  • 1 cup mini semi-sweet chocolate baking chips (or half a 300 gram package mini chips)

How to Make

  • Step 1: Preheat oven to 350 degrees F. Set oven rack to second-lowest position.

  • Step 2: Grease a baking sheet.

  • Step 3: In a medium bowl cream the butter with both sugars and vanilla until well blended (about 2-3 minutes).

  • Step 4: Add in egg and peanut butter; beat until well blended.

  • Step 5: In a small bowl combine the flour with baking soda and salt then add to the creamed mixture and beat on low speed until just blended.

  • Step 6: Mix in the oatmeal until combined then mix in the chocolate chips.

  • Step 7: Drop by tablespoonfuls onto greased cookie sheet.

  • Step 8: Bake for about 8-10 minutes or until edges start to brown.

  • Step 9: Cool for about 5 minutes on cookie sheet then remove to wire racks to cool completely.
