  • 2 tablespoon red wine vinegar
  • 2 tablespoon fresh cilantro (minced)
  • 1 to 2 garlic cloves, minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 bag (10 ounce) frozen corn, thawed and drained
  • 1 can (15 ounce) black beans, drained and rinsed
  • 1 jalapeno pepper, small diced (seeds removed)
  • 2 cups cherry tomatoes (chopped in half)
  • 1 red onion, chopped
