Ingredients

The ingredients are:
  • 2 tablespoons oil (olive oil or vegetable oil)
  • 4 skinless boneless chicken breast (about 1 pound)
  • Salt & pepper
  • 1 jar (16 ounce) Picante Sauce (Pace Picante)
  • 1 teaspoon Italian seasoning, crushed
  • 1 medium green bell pepper, cut into 1-inch pieces (about 1 cup)
  • 1/2 cup pepperoni, chopped
  • Shredded mozzarella cheese, for garnish
  • Cooked rice

How to Make

  • Step 1: Heat the oil in a 10-inch skillet over medium-high heat. Sprinkle both sides of the chicken with salt and pepper. Add the chicken to the skillet and cook for 6-8 minutes or until it's well browned on both sides. Remove the chicken from the skillet and set aside.

  • Step 2: To the skillet stir the picante sauce, Italian seasoning, green pepper and pepperoni in the skillet and heat to a boil. Return chicken to the skillet. Reduce the heat to low. Cover and cook for 20 minutes or until the chicken is cooked through.

  • Step 3: When chicken is cooked sprinkle the mozzarella over the top.

  • Step 4: Serve with cooked rice.
