Ingredients

The ingredients are:
  • 8 ounces thin spaghetti
  • 5 cups broccoli florets
  • 1 pound fresh or frozen shrimp
  • 1/3 cup creamy peanut butter
  • 1/3 cup soy sauce (I use reduced sodium)
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon chili oil
  • 1 tablespoon grated ginger (I use about 1 tsp. ground ginger in a pinch)
  • 3 garlic cloves, minced
  • 1 bunch green onions, chopped
  • 1/3 cup chopped cashews (almonds or peanuts work too)

How to Make

  • Step 1: Bring water to a boil in a large dutch oven.

  • Step 2: Add pasta, cook 4 minutes.

  • Step 3: Add broccoli, cook 2 minutes.

  • Step 4: Add shrimp and cook 2-3 minutes or until pink.

  • Step 5: Meanwhile, combine soy sauce and peanut butter in a bowl.

  • Step 6: Stir in vinegar, sesame oil, chili oil, ginger, and garlic.

  • Step 7: Drain the spaghetti, broccoli, and shrimp mixture and return to pan.

  • Step 8: Toss with the peanut butter mixture and sprinkle green onions and chopped nuts over all.
