The ingredients are:
  • 3 cups oats (quick-cooking oats but old-fashioned works well)
  • 1 1/4 cups brown sugar, packed
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 to 1 teaspoon ground cinnamon
  • 2 large eggs, lightly beaten
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 medium Granny Smith apple; chopped (peel the apple)
  • 1/2 cup peaches, chopped (fresh or frozen)
  • 1/3 cup blueberries (fresh works best but you could use frozen semi-thawed)
  • 1/2 cup confectioners sugar (mixed with milk to make a glaze consistancy)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Prepare an 8-in. square baking then coat with cooking spray

  • Step 3: In a large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon. Combine the eggs, milk and butter; add to the dry ingredients. Stir in the apple, peaches and blueberries. Pour into an 8-in. square baking dish coated with cooking spray.

  • Step 4: Bake for 35-40 minutes or until a knife inserted near the center comes out clean.

  • Step 5: Cut into squares.

  • Step 6: Drizzle the slices with vanilla glaze if desired.
