Ingredients

The ingredients are:
  • 1 small yellow onion, chopped
  • 1/2 cup carrot, finely diced
  • 1/3 cup celery finely diced
  • 1 large garlic clove, minced
  • 1/2 cup butter (or margarine)
  • 1/2 cup all-purpose flour
  • 12 ounces beer
  • 3/4 teaspoon paprika
  • 3/4 teaspoon dry mustard powder
  • 3 cups chicken broth (or up to 5 cups if so desired)
  • 4 cups cheddar cheese, shredded (or a use a blend of cheeses)
  • 2 cups half and half (or half heavy cream and half and half)
  • 1 teaspoon Tabasco (or more)
  • 1 teaspoon Worcestershire Sauce
  • Salt and pepper
  • Salted popcorn or dry bread sticks (for garnish)

How to Make

  • Step 1: Saute carrots, onions, and celery in butter until the onions are translucent. Add in garlic, cook for 1 minute. Add in flour and whisk constantly on low heat for 3 minutes, make sure it does not burn. Stir in beer, then paprika, mustard, worchestershire, and chicken broth, whisking to smooth.

  • Step 2: Add cheese, slowly bring to a boil, reduce heat and simmer for 10 minutes.

  • Step 3: Remove from heat and add in half and half and Tabasco, the season with salt and pepper.

  • Step 4: Serve with extra Tabasco on the side.

  • Step 5: Garnish with fresh popped popcorn, and serve bread sticks on the side.
