  • 2 tablespoons flax meal
  • 4 tablespoons hot water
  • 1/2 cup sweet white sorghum flour
  • 1/3 cup brown rice flour
  • 1/4 cup potato starch
  • 2 1/4 tablespoons tapioca starch
  • 1/4 teaspoon xanthan gum (or guar gum)
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup dried apples, diced (or fresh apple)
  • 1 1/4 cup milk alternative
  • 1 tablespoon applesauce
  • 1 tablespoon oil

How to Make

  • Step 1: Mix the flax meal with the hot water in a small bowl and set aside.

  • Step 2: Whisk together the sorghum flour, rice flour, potato starch, tapioca starch, xanthan gum, brown sugar, baking powder, cinnamon and salt. Stir in the apples.

  • Step 3: Combine the milk alternative, applesauce and flax meal, which will have gelled with the water and add to the flour mixture; stir just until combined.

  • Step 4: Heat oil in a large skillet. Cook the pancakes in batches of 3 or 4, flipping once when the tops appear dry.
