  • 3 large eggs
  • 1 1/2 teaspoon vanilla extract
  • 1 cup rice flour
  • 1/4 cup potato starch
  • 1/4 cup tapioca starch
  • 1 teaspoon xanthan gum
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1/3 cup milk

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Beat butter and sugar together until light and fluffy. Add eggs and vanilla, and beat well.

  • Step 3: Combine flour, xanthan, baking powder, and salt in a medium size bowl.

  • Step 4: Add dry ingredients and milk to egg mixture, and mix until smooth. Scrape bottom and sides of bowl, and mix again just until smooth.

  • Step 5: Pour into greased and rice-floured 9 inch round cake pan.

  • Step 6: Bake at 350 degrees F, for 30 minutes, or until toothpick inserted in center comes out clean.

  • Step 7: Cool completely before frosting.
