Ingredients

The ingredients are:
  • 1 cup dry quinoa (rinsed well and drained)
  • 1 cup vegetable broth
  • 1 cup water
  • Salt to taste
  • 1 tablespoon fresh rosemary, finely minced
  • 1 tablespoon fresh thyme, finely minced (or sage)
  • 1 tablespoon fresh parsley, finely minced
  • 1/2 to 1 teaspoon lemon zest
  • 2 tablespoon flax seed
  • 1/4 cup feta cheese, crumbled

How to Make

  • Step 1: Combine quinoa, broth, water and salt (if using) in a pot.

  • Step 2: Bring to a boil, reduce heat and simmer for 15-20 minutes or until quinoa has absorbed all the liquid and is soft and tender.

  • Step 3: Fluff cooked quinoa with a fork, and toss with rosemary, thyme, parsley, lemon zest, flaxseed, and feta cheese.

  • Step 4: Serve warm.
