Step 1: Combine quinoa, broth, water and salt (if using) in a pot.
Step 2: Bring to a boil, reduce heat and simmer for 15-20 minutes or until quinoa has absorbed all the liquid and is soft and tender.
Step 3: Fluff cooked quinoa with a fork, and toss with rosemary, thyme, parsley, lemon zest, flaxseed, and feta cheese.
Step 4: Serve warm.
