Step 1: Base Vegetables ... Add the vegetable and sesame oil to a large saute pan or wok; and, bring to medium high heat. Saute the peppers and onions, constantly stirring for 3 minutes until slightly tender; then, add the rice, garlic, scallions, mix, and cook another minute.
Step 2: Eggs ... Push the rice mixture to the sides of the pan, so it is NOT on direct heat; and add a little extra oil to the center of the pan (just a light drizzle). Then, add the beaten eggs to the center; stirring or scrambling until set; trying not to incorporate them with the other ingredients. Once scrambled and lightly set (not over done), mix the eggs back in with the rest of the ingredients; and, add the edamame.
Step 3: Finish ... Add the soy sauce, salt and pepper to taste, and a bit of broth to moisten the rice. Go easy with the salt, the soy sauce is salty - even if you use low sodium. Add this point, you can add the chicken if you decide to make this more of a main dish. Cook just a minute or two to heat everything through; remove from the heat, then serve. Note: Shrimp is also delicious in this dish instead of the chicken.
Step 4: Serve and ENJOY! ... This is a great side or main dish; and, perfect without the chicken - as a "meatless Monday" dish too. Just a bit different than the traditional fried rice; but, just as good.
