Ingredients

The ingredients are:
  • MARINADE
  • 1 whole lemon, zested and juiced (about 2 tablespoons juice)
  • 2 tablespoons oil (olive oil)
  • 3 garlic cloves, minced
  • CHICKEN
  • 6 chicken drumsticks
  • Sea salt and freshly cracked pepper, to taste
  • Extra lemon for serving, if desired

How to Make

  • Step 1: Combine the lemon juice, zest, olive oil, and minced garlic together in a large Zip-lock bag.

  • Step 2: Add chicken and seal the bag, then mix until it's evenly coated. Place into the refrigerator to marinate for several hours.

  • Step 3: Remove the chicken from the refrigerator 30 minutes prior to cooking.

  • Step 4: Preheat the oven to 400 degrees F.

  • Step 5: Heat a large OVEN PROOF pan that's been coated in cooking spray over medium high heat. (I use a large frying pan.

  • Step 6: Remove the chicken from the bag, and place on a plate.

  • Step 7: Season both sides of the drumsticks with sea salt and freshly cracked pepper, to taste.

  • Step 8: Add the chicken to the HOT pan, and cook for 3-4 minutes, or until golden brown.

  • Step 9: Flip the chicken over and place into the oven.

  • Step 10: Bake for 25-30 minutes, or until the juices are running clear. Serve with an extra squeeze of lemon, if desired.
