Ingredients

The ingredients are:
  • 1 tablespoon butter
  • 1 onion, peeled and finely chopped
  • 1 large banana, peeled and thickly sliced
  • 1 tablespoon curry powder
  • 1/2 cup water
  • 1 tablespoon apricot jam
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • Pepper, to taste

How to Make

  • Step 1: In saucepan, melt butter over medium heat; cook onion for 3 minutes, or until softened but not browned. Push to side of pan.

  • Step 2: Add banana slices to pan and cook for 1 minute. Add curry powder and cook for 1 minute, stirring banana and onion together.

  • Step 3: Add water and bring to boil; reduce heat and simmer for 10 minutes or until thickened and liquid is reduced by half.

  • Step 4: Remove from heat; stir in jam.

  • Step 5: Transfer to food processor or blender; process until smooth.

  • Step 6: Add sour cream, mayonnaise, salt, and pepper to taste; process just until combined.

  • Step 7: (Can be covered and refrigerated for up to 1 day. Let stand at room temperature for 30 minutes before serving).
