Ingredients

The ingredients are:
  • 1 yellow onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 cup dry wild rice
  • 2 bay leaves
  • 1 teaspoon thyme
  • 4 boneless skinless chicken breasts
  • 7 cups low-sodium chicken broth (you can always substitute turkey or vegetable broth)
  • 1/4 cup fresh chopped parsley
  • Salt and pepper, to taste

How to Make

  • Step 1: Combine all ingredients except parsley into slow cooker.

  • Step 2: Cook on high for 3 1/2 hours.

  • Step 3: Remove bay leaves and chicken.

  • Step 4: Discard bay leaves. Shred chicken (if not already shredded from cooking), and return to crock pot.

  • Step 5: Cook for remaining 30 minutes.

  • Step 6: Top with parsley before serving.
