The ingredients are:
  • 3 cups bran cereal (All-Bran cereal, the kind that looks like shreds or small sticks)
  • 2 cups water
  • 2 egg whites
  • 1/2 cup applesauce
  • 2 teaspoons vanilla
  • 3/4 cup all-purpose flour
  • 1 1/2 cups granulated sugar (or Splenda)
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup walnuts, chopped (or semi-sweet mini chocolate chips)

How to Make

  • Step 1: Preheat oven to 325 degrees.

  • Step 2: Grease 24 muffin tins.

  • Step 3: Mix cereal and water then set aside until all liquid is absorbed.

  • Step 4: Combine cereal/water mixture with egg whites, applesauce and vanilla.

  • Step 5: In a bowl combine all 6 dry ingredients. Stir in wet ingredients. Mix with a large spoon until combined. Stir in chocolate chips.

  • Step 6: Divide among 24 muffin cups.

  • Step 7: Bake 18-20 minutes.
