Step 1: Place the chicken, jerk sauce, and olive oil in small saucepan. Cook over medium heat, stirring, until heated through, about 4 minutes. Season with salt and pepper.
Step 2: When ready to serve, arrange the plantain chips on serving platter. Smear the back of a scallion square with a dab of plain Greek yogurt and place yogurt side down on a chip. Top with about 1 1/2 tsp of the chicken mixture, a generous 1/4-1/2 teaspoon yogurt. Repeat with the remaining ingredients to make 12 pieces.
Step 3: Drizzle lightly with additional jerk sauce, if desired. Serve immediately.
