Step 1: Wash and trim the strawberries, then cut into 1/4 inch rounds, letting them fall into a heavy-bottomed saucepan.
Step 2: Add the sugar and the water, then bring to a boil. Reduce heat and bring to a fast simmer, stirring occasionally, until the strawberries are soft and the liquid looks syrupy. About 8-10 minutes.
Step 3: Add the almond extract and the orange bitters. Stir well.
Step 4: Put in a glass jar and let cool. Keep refrigerated.
