Ingredients

The ingredients are:
  • 3 cups kosher salt
  • 5 cups granulated sugar
  • 2 medium yellow onions (coarsely chopped medium onions)
  • 2 medium leeks (white and pale-green parts only, rinsed and coarsely chopped)
  • 2 carrots (peeled then coarsely chopped)
  • 2 large celery ribs (coarsely chopped)
  • 2 dried bay leaves
  • 3 sprigs fresh thyme
  • 3 parsley leaves (flat-leaf parsley, sprigs, fresh)
  • 2 to 3 teaspoons peppercorns (whole black)
  • 10 cups water
  • 1 garlic bulb (cloves separated then peeled then cloves sliced in half)

How to Make

  • Step 1: Put salt, sugar, onions, leeks, carrots, celery, bay leaves, thyme, parsley, peppercorns, and 10 cups water in a large stockpot. Bring to a boil, stirring until salt and sugar have dissolved. Remove from heat; let brine cool completely then add in garlic cloves.

  • Step 2: Add turkey breast facing downwards in the brine. Cover; refrigerate 24 hours.

  • Step 3: Remove from brine; pat dry with paper towels.

  • Step 4: Let the turkey stand at room temperature 2 hours.

  • Step 5: Season and bake turkey as you desire (there is no need to season the turkey breast side with any salt).
