  • 2 cups water
  • 1/2 cup oats, steel cut
  • 1/8 teaspoon salt
  • 1/2 tablespoon oil (extra-virgin olive oil)
  • 3/4 cup yellow onion, diced
  • 4 ounces mushrooms (sliced)
  • 2 tablespoons Parmesan cheese fresh grated
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Bring water to a boil; add oats and salt and simmer over medium-high heat, stirring occasionally, for 5 minutes.

  • Step 2: Reduce heat to medium-low, cover and continue simmering, stirring occasionally, 25 minutes. Remove from heat.

  • Step 3: Meanwhile, heat oil in a nonstick skillet over medium heat.

  • Step 4: Add onion and mushrooms and saute until onions are translucent, about 5 minutes.

  • Step 5: When oatmeal is done, blend it into the vegetables in the pan and continue cooking, stirring frequently, 5 minutes.

  • Step 6: Remove from heat and stir in Parmesan and pepper, mixing until cheese is completely melted.
