  • 1 pound cremini mushroom (halved)
  • 1 medium yellow onion, peeled and chopped
  • 1 tablespoon garlic, chopped
  • 1 red (6 ounce) bell pepper, seeded and sliced into strips
  • 1 green (6 ounce) bell pepper, seeded and sliced into strips
  • 1/2 cup Cotija cheese, grated (or crumbled)

How to Make

  • Step 1: Heat oil in skillet over medium heat. Add mushrooms, onion and garlic. Cook until onion is just soft, being careful not to brown garlic.

  • Step 3: Place on serving dish and sprinkle with cheese.

  • Step 4: Serve.
