Ingredients

The ingredients are:
  • 1 pound boneless pork loin (sliced 1/4-inch thick)
  • 1 cup teriyaki sauce (spicy garlic)
  • 2 teaspoons oil (extra-virgin olive oil)
  • 1/2 cup onion, diced
  • 1 tablespoon fresh garlic, minced
  • 1 teaspoon fresh gingerroot, minced
  • 1/2 cup carrot, sliced
  • 1 cup red bell pepper, diced
  • 8 ounces fresh mushrooms, sliced (baby bellas)
  • 1/2 cup edamame (frozen, thawed)
  • 1 3/4 cups water
  • 2 cups dry instant brown rice
  • 1/8 cup water
  • 1 tablespoon cornstarch

How to Make

  • Step 1: Combine pork and teriyaki sauce in a zip-top plastic bag; marinate in refrigerator at least four hours, turning occasionally.

  • Step 2: Heat oil in a large deep skillet; add onion and cook 5 minutes, until starting to get translucent.

  • Step 3: Add garlic, ginger and pork slices with marinade; stir-fry 5 minutes until pork starts to turn white.

  • Step 4: Add remaining vegetables and stir-fry 15 minutes, until almost done.

  • Step 5: Meanwhile, heat 1 3/4 cup water to a boil in a medium saucepan; add instant rice, cover, reduce heat to medium-low and simmer 5 minutes. Leave covered, remove from heat, and let stand until ready to serve.

  • Step 6: Mix together 1/8 cup water and cornstarch; add to skillet and cook an additional 5 minutes, until sauce thickens.

  • Step 7: Divide rice evenly among plates and top with pork and vegetable mixture.
