Step 1: Combine pork and teriyaki sauce in a zip-top plastic bag; marinate in refrigerator at least four hours, turning occasionally.
Step 2: Heat oil in a large deep skillet; add onion and cook 5 minutes, until starting to get translucent.
Step 3: Add garlic, ginger and pork slices with marinade; stir-fry 5 minutes until pork starts to turn white.
Step 4: Add remaining vegetables and stir-fry 15 minutes, until almost done.
Step 5: Meanwhile, heat 1 3/4 cup water to a boil in a medium saucepan; add instant rice, cover, reduce heat to medium-low and simmer 5 minutes. Leave covered, remove from heat, and let stand until ready to serve.
Step 6: Mix together 1/8 cup water and cornstarch; add to skillet and cook an additional 5 minutes, until sauce thickens.
Step 7: Divide rice evenly among plates and top with pork and vegetable mixture.
