Ingredients

The ingredients are:
  • 2 Cornish game hen (24 ounces)
  • Melted butter
  • Salt & pepper
  • Baby carrots (as much as you would like to use, I used two small bags)
  • GLAZE
  • 1/3 cup apple jelly
  • 2 1/2 tablespoon butter (or margarine)
  • 1/4 teaspoon salt, or to taste
  • 1/4 to 1/2 teaspoon dried marjoram leaves, rubbed (or more to taste)

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Split hens in half. Rinse and pat dry.

  • Step 3: Brush skin side with melted butter, then season with salt and pepper

  • Step 4: Place skin sides up in greased 13x2-inch baking dish.

  • Step 5: Arrange carrots around hen.

  • Step 6: In 1-quart saucepan, cook apple jelly with butter, salt and marjoram over low heat 2 to 3 minutes, stirring constantly, until warm. Brush half of sauce over hen and carrots. Cover with foil.

  • Step 7: Bake 40 minutes. Uncover; brush with remaining sauce, bake 20 minutes longer, brushing with pan juices once or twice or until hen is fork tender.
