  • 1 head Romaine lettuce
  • 1 bunch leaf lettuce
  • 2 medium tomatoes, sliced in thin wedges
  • 2 stalks celery, sliced
  • 1 bell pepper, seeded, sliced
  • 10 radishes, sliced
  • 4 green onions, sliced
  • Vinaigrette Ingredients:
  • 3 tablespoons olive oil
  • 2 tablespoons tarragon vinegar
  • 2 teaspoons anchovies, mashed (or anchovy paste)
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt

How to Make

  • Step 1: Wash and dry Romaine and leaf lettuces well; tear into bite size pieces and place into a large salad bowl.

  • Step 2: Cover with remaining salad ingredients; chill until serving time.

  • Step 3: In a small bowl, whisk together olive oil, vinegar, anchovies and other seasonings.

  • Step 4: At serving time drizzle vinaigrette over lettuce mixture, toss to coat.
