Ingredients

  • FOR COOKIES
  • 1/2 cup margarine, softened (or butter, softened)
  • 1 cup brown sugar
  • 1 large egg
  • 1/3 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 194 grams cashew halves (salted, 1 3/4 cups)
  • FOR FROSTING
  • 1/2 cup butter (ONLY)
  • 3 tablespoons light cream
  • 1/4 teaspoons vanilla extract
  • 2 cups powdered sugar

How to Make

  • Step 1: Preheat oven to 375 degrees.

  • Step 2: In a bowl, cream softened margarine or butter and brown sugar. Beat in egg, sour cream and vanilla; mix well.

  • Step 3: Combine dry ingredients; add to creamed mixture and mix will. Gently fold in cashews.

  • Step 4: Drop by rounded teaspoonfuls onto greased baking sheet. Bake in preheated oven 8-10 minutes. Remove from pan onto cooling racks; cool thoroughly.

  • Step 5: To make the frosting: lightly brown butter in pan; remove from heat. Add in cream and vanilla. Beat in confectioners sugar until smooth & thick.

  • Step 6: Frost cookies and decorate each cookie with a cashew half.
