  • 3/4 cup all-purpose flour
  • 1/4 cup oats
  • 1/4 cup light brown sugar
  • 2 ounces butter
  • 2 1/2 tablespoons black treacle (molasses)
  • 1 teaspoon ground ginger
  • 1 teaspoon mixed spice ( see description)
  • 1 large egg, well beaten
  • 1 teaspoon baking soda
  • 3 tablespoons milk

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Line an 8-inch square baking pan with parchment paper which has been well buttered.

  • Step 3: Melt the 2 ounces butter, sugar and treacle in a saucepan over a low heat.

  • Step 4: Sift the flour and baking soda into a bowl.

  • Step 5: Add the oatmeal and spices.

  • Step 6: Add the melted butter and treacle mixture, beaten egg and the milk to the bowl, stirring well until completely blended.

  • Step 7: Pour into the baking pan and bake about 45 minutes.

  • Step 8: Allow the cake to cool for ten minutes before turning out onto a wire rack.

  • Step 9: Serve with a dollop of sweetened whipped cream or vanilla ice cream.
