Step 1: Preheat oven to 425 degrees. Prepare muffin tins with papers, or by spraying them with non-stick spray.
Step 2: In large bowl, combine first 6 ingredients; set aside
Step 3: In seperate bowl, mix together apple sauce, sugar, egg whites, and bananas. Stir in buttermilk.
Step 4: Add banana mixture to flour mixture; stir well to combine. Make sure there are no dry spots. Fill muffin cups about 2/3 full.
Step 5: Bake in preheated oven 20 minutes or until toothpick inserted comes out clean.
