  • 1 1/2 cups all purpose flour
  • 1/4 cups oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 cup apple sauce
  • 1/4 cup light brown sugar
  • 2 egg whites, lightly beaten
  • 1 cup mashed bananas
  • 1 cup plus 1 tablespoon non-fat buttermilk

How to Make

  • Step 1: Preheat oven to 425 degrees. Prepare muffin tins with papers, or by spraying them with non-stick spray.

  • Step 2: In large bowl, combine first 6 ingredients; set aside

  • Step 3: In seperate bowl, mix together apple sauce, sugar, egg whites, and bananas. Stir in buttermilk.

  • Step 4: Add banana mixture to flour mixture; stir well to combine. Make sure there are no dry spots. Fill muffin cups about 2/3 full.

  • Step 5: Bake in preheated oven 20 minutes or until toothpick inserted comes out clean.
