Ingredients

The ingredients are:
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground aniseed
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground white pepper
  • 1 cup unsalted butter, softened
  • 1 1/2 cups brown sugar, dark (firmly packed)
  • 3 tablespoons dark rum (or brandy, or milk)
  • 1/2 to 1 cup slivered almond (pieces, depending on how many pieces you use on each cookie)
  • 1 egg white

How to Make

  • Step 1: Preheat oven to 375F. Butter or grease baking sheets.

  • Step 2: Into a bowl, sift flour, baking powder and all of the spices.

  • Step 3: In a bowl of electric mixer, beat butter and brown sugar until light and fluffy.

  • Step 4: Stir in rum (or brandy or milk).

  • Step 5: Gradually add the flour/spice mixture, stirring until well combined.

  • Step 6: Form dough into a ball.

  • Step 7: Sprinkle work surface with flour and knead the dough. Roll dough into a rectangle about 1/4 inch thick.

  • Step 8: With a sharp knife or pizza cutter, cut dough into rectangles 2 1/2 inces by 1 1/2 inches.

  • Step 9: Put rectangles onto prepared baking sheets.

  • Step 10: Press some almond pieces into top of each rectangle and brush with lightly beaten egg white.

  • Step 11: Bake 12-15 minutes until browned and firm.

  • Step 12: Cool on wire rack.
