  • 1/2 cup granulated sugar

  • 1 teaspoon almond extract
  • 2 1/4 cups gluten-free flour (all purpose baking flour)
  • 1 1/2 teaspoons xanthan gum
  • 1/2 teaspoon salt

How to Make

  • Step 1: Preheat oven to 400

  • Step 2: Cream together the butter and sugar until light and fluffy

  • Step 3: Beat in the egg and almond extract

  • Step 4: In another bowl whisk together the flour, gum and salt

  • Step 5: Gradually beat the flour mixture into the butter mixture

  • Step 6: Using a cookie press with a disk of your choice press dough 1 inch apart onto an ungreased baking sheet

  • Step 7: Bake 6-8 inutes or until the bottoms are light brown

  • Step 8: Remove from sheets and place on wire racks to cool

  • Step 9: If you are using the frosting warm it to reach a drizzling consistency

  • Step 10: Drizzle over the cookies
