  • 1 (1 pound) box rotini pasta
  • 1 cucumber, peeled and diced
  • 2 tomatoes, diced
  • 1 stalk celery, diced
  • 1 small green pepper, diced
  • 1 small red onion, diced
  • 2 cups cooked rotisserie chicken, cold
  • FOR DRESSING
  • 2 cups reduced-fat mayonnaise (do not use salad dressing)
  • 1 cup reduced-fat Italian salad dressing (or full fat)
  • 1/3 cup sugar
  • 2 teaspoons yellow mustard
  • 2 teaspoons dill weed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

How to Make

  • Step 1: Cook rotini according to package directions and cool.

  • Step 2: Whisk all dressing ingredients together in a bowl; set aside.

  • Step 3: Chop all veggies and chicken; add to the rotini.

  • Step 4: Pour dressing over pasta and veggie mixture; stir well to combine.

  • Step 5: Cover and refrigerate salad at least 4 hours before serving. Longer sit time is better in order for flavors to blend.
