Step 1: Salmon ... Be sure to take the salmon out of the refrigerator to take the chill off. Line a baking sheet with either parchment paper or foil for easy clean up. Spray lightly with a non-stick spray and lay the salmon on skin side down.
Step 2: Mustard Mayonnaise ... In a small bowl, add the mayonnaise, dijon mustard, lemon zest, salt and lemon pepper and mix well. Spread over the top of the salmon.
Step 3: Bake ... I start out baking them on the middle shelf at 400 degrees for 10-15 minutes (it depends on the thickness of your fish). Then the last 5 minutes, turn on the broiler and move the shelf up in the oven and broil approximately 5 minutes until the crust starts to get brown. You don't want to over cook your salmon.
Step 4: Serve ... I love to serve this with roasted potatoes and wilted spinach. ENJOY!
