Ingredients

The ingredients are:
  • 1 quart water (cold)
  • 1 teaspoon lemon juice
  • 2 apples (red apples, unpeeled, cored and diced)
  • 1 apple (Granny smith, unpeeled, cored and diced)
  • 1 pear, unpeeled (firm green or red, cored and diced)
  • 375 grams cooked chicken (3 cups diced, for vegetarian version, see description)
  • 1 cup celery, thinly sliced
  • 95 grams walnuts, chopped (3/4 cup coarsely chopped, or pecans)
  • 1/2 cup dried cranberries (sweetened)
  • 1 cup mayonnaise
  • 4 ounces sour cream (1/2 cup)
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, finely chopped
  • Lettuce, for serving

How to Make

  • Step 1: Pour the cold water into a medium bowl, and mix in the 1 teaspoon of lemon juice. Add the diced fruit and allow to stand briefly.

  • Step 2: In a large bowl, mix the chicken, celery, walnuts and dried cranberries.

  • Step 3: Drain and add the diced apples, mixing well.

  • Step 4: In a small bowl, whisk together mayonnaise, sour cream, 2 tablespoons lemon juice and parsley.

  • Step 5: Add to the chicken mixture and gently toss to coat.

  • Step 6: Cover bowl with plastic wrap and chill thoroughly before serving.

  • Step 7: To serve place some lettuce leaves on each plate on top with salad.
