Step 1: Slice all 4 baked potatoes in half.
Step 2: Scoop out the soft potato pulp insides but leaving about 1/2 inch in the shell. Transfer pulp to a bowl.
Step 3: Add in butter, sour cream and cream cheese, salt, pepper, garlic powder and onion powder (the cream cheese is what give the filling such a tasty tangy flavor and also gives the filling some bulk). Using an electric mixer beat until smooth, Adding in the cream slowly while beating (depending on how large your potatoes are start with only 1/4 cup and you could add in more but be careful you do not want a filling that is too soft!).
Step 4: Mix in the minced bacon, 1 cup shredded cheddar cheese and minced onions.
Step 5: Divide the pulp between the 8 shells. Place them onto a greased baking pan.
Step 6: Bake at 350f (lowest rack) for 20-22 minutes.
Step 7: Remove. Sprinkle some grated cheddar over top of each potato. Place under the broiler for a few minutes until just melted.
Step 8: Get read to enjoy the best stuffed potatoes!
