Step 1: Preheat oven to 350°. In a skillet, melt oil and saute carrots until almost tender, then add in green onions until soft.
Step 2: Now, you can either add the cabbage and cauliflower and saute until almost soft, or, while carrots are cooking, steam them a few minutes until crisp tender or so.
Step 3: Meanwhile, in bowl, whisk together the egg, milk, parsley, salt pepper and Parmesan cheese.
Step 4: Pour all ingredients into a baking dish, or your cast iron skillet (already used) and mix well. Bake, uncovered, 30-35 minutes.
