Step 1: Blend the water and the honey with the cardamom and place over medium-low heat. Bring to a simmer and cook 5 minutes, stirring constantly.
Step 2: Chop the mint leaves and add with the salt to the mixture. Simmer 2 minutes more. Remove from heat and let cool to room temperature.
Step 3: When ready to serve, add the port and mix well.
Step 4: If the sauce is too thick, add a little more wine and mix again.
Step 5: Pour into serving bowl and serve with sliced roast beef.
