The ingredients are:
  • 2 pound whole pumpkin
  • 1 tablespoon oil (olive oil)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 ounces feta cheese, crumbled
  • 1/4 cup cilantro leaves
  • Pumpkin seed oil, to taste
  • Sherry vinegar, to taste

How to Make

  • Step 1: Remove the seeds from the pumpkin, then peel it. Cut it into 1/2 inch thick wedges.

  • Step 2: Toss the pumpkin with olive oil, salt and pepper. Place on a baking sheet and roast in a 450°F oven, turning occasionally, until tender, about 20 minutes.

  • Step 3: On the serving plate, layer the pumpkin with feta and cilantro. Drizzle with pumpkin seed oil and sherry vinegar.
