Step 1: Remove the seeds from the pumpkin, then peel it. Cut it into 1/2 inch thick wedges.
Step 2: Toss the pumpkin with olive oil, salt and pepper. Place on a baking sheet and roast in a 450°F oven, turning occasionally, until tender, about 20 minutes.
Step 3: On the serving plate, layer the pumpkin with feta and cilantro. Drizzle with pumpkin seed oil and sherry vinegar.
