Step 1: Note ... First, I really like to make this in a large cast iron pan; but, you can use any large saute pan. Also, the amounts are what I use. If you want more potatoes, or more peppers; by all means, add them. A hash is a mix - so, don't be afraid to make it, like you like it.
Step 2: Bacon ... Add the oil to your pan, and bring to medium heat. Add the bacon, and saute slowly. You want the bacon crisp; but, you don't want it to burn, so go slowly. Once the bacon is crisp, remove using a slotted spoon, to a plate lined with a paper towel to drain. Don't throw away those drippings. That will be used to cook the remaining vegetables.
Step 3: Vegetables ... Bring the heat back up to medium-medium high, and add the potatoes, onions, celery, and a pinch of both salt and pepper; and cook 3 minutes. Then, add in the red pepper and garlic, and cook another 2-3 minutes until the vegetables are just about done. Make sure to stir often. If the pan seems dry at any point, add some of the chicken broth.
Step 4: Add the cabbage, all purpose seasoning, and a bit more chicken broth; then, toss to combine all the ingredients. Cover on medium low heat and cook 3-5 minutes until tender. After 3 minutes, stir, add a bit more broth, only if needed; and, continue to cook another 2 minutes with the lid off so any liquid can reduce (evaporate). The chicken broth helps to steam (cook) the cabbage; but, you want to make sure it is all gone, before serving.
Step 5: Eggs ... As the cabbage cooks, prepare your eggs. Use any method you like. You can even make poached eggs too. I like to add a little butter to a pan, medium heat, add your eggs, season with salt and pepper; then, reduce the heat to medium low. Add a bit of water to the pan, and cover. This creates a tender and moist egg; that has NO brown edges, and perfectly cooked.
Step 6: Finish and Serve ... By now, your cabbage should be tender; along with all the other vegetables. Check for seasoning one last time, add the bacon back in; and mix. Then, top with the cheese, put the cover back on, and turn off the heat. In just a minute, all the cheese should be melted.
Step 7: Serve and ENJOY! ... Plate up the hash, and top with a couple of eggs. Personally, I love a little mustard on the side; and, garnish with fresh chopped chives. But, enjoy it - how you like it. A great easy dinner. And, as I said; I love a small salad on the side.
