Ingredients

The ingredients are:
  • 6 tablespoons butter (real butter, now come on)
  • 1/4 cup all-purpose flour
  • 1/4 cup onions, finely chopped (or shallots, if you like)
  • 1 dry bay leaf (or 2 fresh)
  • Dash ground nutmeg
  • 2 cups whole milk (but go ahead and use reduced fat if you must)
  • 2 packages (10-ounce each) frozen spinach
  • Salt and pepper
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Thaw the spinach in a colander and use a cotton kitchen towel to squeeze out all the moisture. If you're using fresh spinach, cook it (microwave, steam, whatever) and squeeze it just the same. You don't want it to be watery at all.

  • Step 2: Melt 4 Tbsp. butter in a heavy saucepan over medium heat. Add flour and stir until golden, about 10 minutes.

  • Step 3: Stir in onion and the bay leaf.

  • Step 4: Whisk the milk in slowly and continue to whisk until the mixture boils and thickens. Shouldn't take more than 10 minutes or so.

  • Step 5: Reduce the heat to low and whisk away. The sauce will be thick and need your attention!

  • Step 6: Remove the bay leaf or leaves. Add the spinach to the warm sauce and simmer until heated through, stirring often....no more than 5 minutes or so.

  • Step 7: Add the remaining butter and nutmeg. Add and adjust the salt and pepper to make it just the way you like it.
