Ingredients

The ingredients are:
  • 12 to 14 slices bread, crusts removed
  • 4 tablespoons butter, melted
  • 2 packages (10-ounces each) frozen chopped spinach, thawed and squeezed dry
  • 4 ounces smoked salmon (Alaska)
  • 2 cups shredded cheddar cheese
  • 10 large eggs
  • 2 1/2 cups milk

How to Make

  • Step 1: Arrange 6 or 7 slices of bread in the bottom of a greased 9-by-13 inch baking dish.

  • Step 2: Brush them with half of the melted butter.

  • Step 3: Using your hands, distribute the spinach evenly over the bread.

  • Step 4: Top the spinach with smoked salmon.

  • Step 5: Scatter on the cheese and top with remaining bread. Brush with remaining butter.

  • Step 6: Beat the eggs and milk in a large bowl. Slowly pour half of this mixture over the top layer of bread, soaking it thoroughly. Wait 5 minutes and pour remaining egg mixture over the bread.

  • Step 7: Cover tightly with plastic wrap and refrigerate overnight.

  • Step 8: Next morning, preheat oven to 350F.

  • Step 9: Remove strata from refrigerator and let sit at room temperature for about 15 minutes.

  • Step 10: Remove plastic wrap and bake for 45 minutes, or until puffy and lightly browned.

  • Step 11: Cut in rectangles or squares and serve hot.
