Ingredients

The ingredients are:
  • 20 whole medium mushrooms (or large mushrooms, cleaned, stem removed, finely chop the stems)
  • 3 tablespoon butter (melted)
  • 3 tablespoon chopped sweet onion (finely chopped)
  • 3 garlic cloves, large (finely chopped)
  • 2 tablespoons chopped red bell pepper (finely chopped)
  • 14 crackers, crushed (Ritz crackers, or Melba toast, small crackers)
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

How to Make

  • Step 1: Measure out 1/4 cup chopped mushroom stems (use remaining in another recipe).

  • Step 2: Melt the butter in a skillet, add mushroom stems, onion, garlic and peppers, cook 5 minutes.

  • Step 3: Stir in crumbs, cheese and seasoning.

  • Step 4: Spoon mixture into the mushroom caps, place on a baking sheet.

  • Step 5: Bake in 400f oven for apprx 15 minutes or until heated through.
