Ingredients

The ingredients are:
  • 4 egg whites
  • 2/3 cup granulated sugar
  • 3 tablespoons gin
  • 1 1/2 teaspoons lime peel, grated
  • 1/4 teaspoon salt
  • 3/4 teaspoon almond extract
  • 1 package (14 ounces) flaked coconut
  • 1/2 cup all purpose flour
  • 8 ounces white chocolate, melted (baking chocolate)

How to Make

  • Step 1: Preheat oven 350f

  • Step 2: Whisk together until blended the egg whites, sugar, gin, lime peel, salt and almond extract.

  • Step 3: In a large bowl toss the coconut with the flour, stir in the egg mixture.

  • Step 4: Grease baking sheets and drop by tablesponns 2 inches apart.

  • Step 5: Bake 15-18 minutes or until tops are lightly browned

  • Step 6: Remove from pans to wire rack and cool completely

  • Step 7: Dip bottoms of the macaroons into the melted chocolate, allow excess to drip off. Place on wax paper, Let stand until set

  • Step 8: Store in air tight container
