  • Salt and pepper to taste
  • 2 bread slices, toasted (or an english muffin, split toasted)
  • 3 teaspoons chopped chives, optional

  • Step 1: Whip the eggs, cottage cheese, cumin together

  • Step 2: Lightly spray a skillet with oil

  • Step 5: Season with salt and pepper

  • Step 6: Top with cheese

  • Step 7: Add Salsa
