  • 2 cups milk
  • 1/2 cup granulated sugar

  • 1/8 teaspoon ground nutmeg (optional)

  • 2 1/2 cups cooked white rice
  • 1/3 cup raisins (or more or Craisins)

  • Step 1: Preheat oven to 325 degrees.

  • Step 2: Butter a 9-inch baking pan.

  • Step 3: In a large bowl, beat eggs for 2 minutes.

  • Step 5: Stir in rice and raisins. Pour into buttered baking pan.

  • Step 6: Bake 45-50 minutes or until edges are puffed and center is almost set.

  • Step 7: Allow to stand 20 minutes before serving.
